Pumpkin Chocolate Chip Cookies

PUMPKIN CHOCOLATE CHIP COOKIES


3/4 cup butter, softened
2 1/4 cup sugar
2 eggs
1 can pumpkin
3 1/2 cups flour
1/2 tsp. ginger
1 tsp. nutmeg
1 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. baking powder
1/2 tsp. allspice
1/2 tsp. baking soda
1 bag semi-sweet chocolate chips

Preheat oven to 400 degrees.

In a large bowl, cream butter and sugar. Add eggs and pumpkin and mix well.

In another bowl, combine remaining dry ingredients (except chocolate chips). Slowly add to pumpkin mixture until well blended. Fold in chocolate chips.

Drop by rounded teaspoonfuls (or use a medium cookie scoop) on parchment lined cookie sheet, 2 inches apart. Bake for 10-12 minutes or until set.

This makes a LOT of cookies. Good for cookie-swaps.
